Low-Carb and Keto Cheese Danish Recipe
Looking for an amazing sweet treat you can enjoy with breakfast or as a delicious snack/dessert? Give these low-carb cheese danishes a shot! This is an adaptation of a tried-and-true keto recipe known as cloud bread, sometimes also called "oopsie" bread. When I made some cloud bread and noticed the taste and texture, I immediately thought it would be an ideal light & fluffy base for a breakfast pastry, and soon afterward I decided to prove that theory. Here is the recipe for the delicious result!
Ingredients
- 8 oz. cream cheese, softened and separated into 3 oz. and 5 oz portions
- 3 eggs, separated
- 1/8 Tsp cream of tartar
- Pinch of sea salt
- Low/Zero carb sweetener of choice (I used powdered Swerve and liquid stevia)
- Water
- (Optional) Vanilla or other flavor extract/emulsion
Instructions - Pastry
- Preheat oven to 300 degrees
- Add egg whites and cream of tartar to a large bowl and beat with hand mixer until stiff peaks form (stiffer is better)
- In a separate large mixing bowl, combine 3 oz. of cream cheese, egg yolks, sea salt, and 3-4 drops of liquid stevia (or your favorite sweetener) and mix until fully incorporated
- Carefully and gradually fold the egg white mixture into the yolk and cream cheese mixture
- Spoon the mixture onto a baking sheet covered with parchment paper in 6 equal portions that are more or less round in shape, making a slight indentation in the middle with the back of the spoon
- Bake for 25 to 30 minutes until they start to become golden
Instructions - Filling
- While pastries are in the oven, combine remaining 5 oz. of cream cheese with some sweetener, determining the amount based on how sweet of a mixture you like; I used powdered Swerve for this step, but you can also use liquid stevia
- Mix, taste, and adjust sweetness to suit your preference
- (Optional) Add a few drops of vanilla or flavor extract/emulsion and mix until fully incorporated
- After pulling pastries out of the oven, spoon the filling in equal parts on all 6 of them, spreading to fill the slight depression you made in the middle
- Return to oven and bake for about 10 more minutes, or until the pastries reach desired color
Instructions - Glaze
- In a small bowl, combine about 1/8 cup powdered Swerve or other powdered sweetener with an equal amount of water and stir until completely mixed
- Once pastries with filling are done baking, drizzle glaze over the top, then allow to fully cool to room temperature
- Serve and enjoy!
I mentioned using flavor extracts or emulsions, so here is a variation I tried that was pretty tasty! I simply added some strawberry flavor emulsion that I bought from Amazon to the cream cheese mixture. A little of this goes a long way, so just a few drops. It gave the pastries a pretty cool color variation, and a very identifiable strawberry flavor.
